平台式定向荷藕切片机设计及试验——切片机整机结构设计及试验研究
摘要
荷藕是一种多孔质蔬菜,水分多,淀粉含量高,形状又不规则,其肉质即嫩又脆,因而给其装夹、机械化切片作业带来了一定困难,针对我国荷藕机械化切片技术落后,主要停留在人工切片这一现状,进行了荷藕物料特性的研究,
在分析了国内外食品切片加工技术基础上,结合其物料特性,设计了一种新型莲
藕切片机,并对该机进行性能试验及优化。
本文对于荷藕的几何形状和尺寸进行统计和分析,包括荷藕节长和节径的分布范围,藕节不同部位的节径差值大小,以及对藕片的粘性等的计算。同时还介绍了荷藕切片技术的研究现状及存在的问题初步探讨了曲柄滑块式荷藕切片机的整体结构对荷藕切片中存在的物料夹持问题粘刀问题和藕片破碎问题提出相应的解决措施。

Lotus root being sticked on the blade.In allusion to the present condition of the low lotus root mechanization slice technique,mainly,staying around the artificial to cut into slices in our country, the lotus root material characteristicwas investigated in this paper.And a new kind of lotus roots slice machinewas designed at the foundation of analyzing the domestic and international food slice processing technology, combining its material characteristic, and the function of the machinewas tested and optimized.
In this paper, for the lotus root geometry and size of the statistics and analysis, including lotus root length and diameter distribution of the scope of section track different parts of the margin size, aswell as theviscosity, such as calculations.
